Tahini and Date Salted Caramel Shakao

A rich, creamy, sweet and salty variation of the traditional Shakao recipe that's bound to put a smile on your dial. 

This quick, easy and healthy recipe is one of our favourite ways to make Shakao when we have the blender / nutri-bullet handy; it's the cuppa to make if you are looking to impress! 

We were first introduced to this recipe by our good friend Zilky; an Ayurvedic & Wild Bush Foods facilitator who created this delicious cuppa while catering for a group on a breath-work retreat in the Victorian Alps.

What's unique about Zilky's approach to cooking/nourishment is her frequent use of seasonal, wild-caught, foraged or locally grown ingredients; and her intuitive cooking style.  She's always referred to her work as "nourishment" rather than 'catering' which I think is the best way to describe what she does. 

We are grateful to have sat down with Zilky to get the details of one of her recipes which can be tricky as she rarely works to them!

Ingredients (2 Servings)

2 heaped tsp. Shakao

1 tsp. Honey, Maple OR a Whole Date (*if using honey/maple, adjust to taste)

2 tbsp. Tahini (OR nut butter of your choice e.g. hazelnut butter!)

2 cups of your milk of choice (or water if you prefer)

1 tsp Ghee or Butter (check out our easy homemade Organic Ghee recipe here!)

A pinch of Celtic Sea Salt or similar!

Method

1. In your blender/nutri-bullet add 2 heaped teaspoons of Shakao with some hot water and stir to form a paste.

2. Heat two cups of milk to your desired serving temperature (approx. 55-65°C, or just before it's too hot to touch to ensure that you don't burn the milk!)

3. Add milk, and all other ingredients to the blender/nutri-bullet and blitz.

4. Serve in your favourite mugs and enjoy. Makes two servings.

Spiced Shakao Energy Balls

These nutrient-packed energy balls combine the rich flavors of cacao with warming spices for a perfect healthy snack.

Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup raw almonds
  • 1/4 cup cacao powder
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp turmeric powder
  • Pinch of sea salt
  • 2 tbsp shredded coconut

Instructions

  1. Soak dates in warm water for 10 minutes if they're hard
  2. Drain dates and add to food processor
  3. Add almonds and pulse until roughly chopped
  4. Add cacao powder, coconut oil, vanilla, cinnamon, turmeric, and salt
  5. Process until mixture forms a sticky dough
  6. Roll mixture into 12 small balls
  7. Roll each ball in shredded coconut
  8. Refrigerate for 30 minutes before serving
  9. Store in refrigerator for up to 1 week
