Raspberry and Shakao Brownies

A healthy, tasty treat that show's you can have your cake and eat it too.

We love creative cooking and healthy, feel-good-recipes and this one from our friend and nutritionist Maddy Low (@nourishwithin_nutrition). It's a great example of how you can create sweet treats using healthy ingredients.

Maddy's a nutritionist specialising in gut health, she also happens to be a bit of an undercover athlete; triathlons, adventure racing, ocean swims and recently jiu-jitsu are all part of a wholesome, healthy approach to living. More about her below, here's the recipe.

Raspberry and Shakao Brownies

Ingredients

  • 100g butter
  • 1/4 cup sugar
  • 1/4 cup maple
  • 1/4 cup tahini/ nut butter
  • 1/4 cup shakao
  • 1/4 cup cacao
  • 2 eggs beaten
  • 1/2 cup coconut milk
  • 1.5 cup almond meal
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1 cup raspberries
  • 1/2 cup chocolate
  • 1 tsp Vanilla bean essence
  • Salt

Method

  1. Preheat oven to 160 degrees and line a baking tray.
  2. Into a bowl mix dry ingredients, almond meal, flour, Shakao, cacao, baking powder.
  3. Melt butter in a pot. Once melted add in sugar, maple, vanilla and tahini and whisk together well.
  4. Add wet mix to dry mix. Whisk 2 eggs and add in. Add in milk and stir well. Then add in raspberries and chocolate.
  5. Pour into the prepared baking dish and bake in the oven for 45 minutes. Allow to cool.
